                                               Dhaba Style Bhindi Masala


Masala bhindi(okra) is specialty of North Indian thali. It is very simple, healthy, easy to make and everyone like to eat it. Bhindi is included in the meal as side dish with roti and dal or boondi raita and parantha. It can also be packed in lunch box. Bhindi is prepared in many ways such as-fry bhindi, masaledar bhindi, kurkuri bhindi, bhindi hari mirch. My kids like to eat masala bhindi with poori or parantha.

Ingredients:

  • 250 gram--bhindi/okra/ladyfinger
  • 2 large---onion(finely chopped)
  • 2---tomatoes(finely chopped)
  • 1,1/2 tsp---ginger-garlic paste
  • 2---green chili(finely chopped)
  • 1/2 tsp---cumin seeds(jeera)
  • 1,1/2 tsp---red chili powder
  • 1/2 tsp---turmeric powder
  • 1 tsp---dry coriander powder
  • 1 tsp---dry mango powder(aamchur)
  • 3 tsp---curd
  • according to taste---salt
  • 4 tsp---oil

Method

  • Wash the bhindi and thoroughly dry it with kitchen towel after washing. There should be not any moisture.
  • Cut the both ends of bhindi and then cut 3/4 inch pieces.
  • Heat 2 tsp oil in heavy bottom pan, put bhindi in it fry the bhindi for 5 to 7 minute, on the medium flame.
  • Keep stirring it occasionally
  • When the bhindi is cooked, take it out and put it in the plate
  • Heat 2 tsp oil in the same pan, on the low medium flame.
  • Add cumin seeds.
  • Put ginger-garlic paste when the cumin seeds crackling.
  • cook it for while. put onion and green chili.
  • Cook it until the onion become golden colour.
  • Add tomatoes, cook it for 2 minutes.
  • When the tomato has cooked, put salt,, red chili powder, turmeric powder, dry coriander powder, dry mango powder, mix it properly.
  • Put 3 tsp curd and keep stirring it continuously.
  • Put fried bhindi and mix it gently.
  • Cook it for 3 minutes.
  • put garam masala, cook it for while.
  • Switch off the flame.
  • Masala bhindi is ready to serve.
  • You can enjoy it as side dish with dal, simple roti/parantha

Tips

Wash before cutting the bhindi and thoroughly dry it with kitchen towel after washing. There should not be any moisture otherwise bhindi will become sticky.
