Mostly people complaint that making karele(bitter gourd) is very difficult. It is made in any way, it becomes bitter and takes a lot of time but if you make it with my method, it will not become bitter and will also be made soon. To make karele by this method, there is no need to keep the karela's pre-salted.

INGREDIENTS:
- karele (bitter gourd)--250 gram
- onion--2 (long finely chopped)
- green chili--2 (chopped)
- oil--3 tsp
- fennel seeds (saunf)--1 tsp
- cumin seeds (jeera)--1/2 tsp
- red chili powder (lal mirch powder)--1 tsp
- turmeric powder (haldi powder) 1/2 tsp
- dry coriander powder 1 tsp
- dry mango powder (aamchur powder)--1 tsp
- sugar--1 tsp
- salt--according to taste.
Method
- Cut the karela into medium sized round pieces.
- boil 4 cups of water and put 1 tsp salt in it.
- Put pieceso of karele in it and boil it 2 minutes.
- Remove karele from boiling water and wash it with cold water.
- Let the karele remain in the sieve for a while so that all their water gets drained.
- Heat oil in a heavy bottom pan.
- Put the cumin seeds and fennel seeds to it.
- Put onion when the cumin seeds crackle.
- Cook the onion till they turn golden.
- Wash and peel the karele.
- When the onion is cooked,add green chili and pieces of karele.
- Cook the karele for 7 to 8 minutes on low heat.
- Stir it occasionally so that it turns golden from all sides.
- When karele turns golden add salt,red chili powder,turmeric powder,corainder powder mango powder and sugar, mix it properly.
- Cook it for 2 minutes. karele ki sabzi is ready to serve.
- we can enjoy it with simple phulka,parantha or poorie.
