Many types of sweets are made in Indian homes, on festivals and auspicious occasions.  Many types of halwa are made in Indian families such as aata halwa, suji halwa, gajar halwa, lauki halwa, kaddu halwa. Here I am telling you , how to make lauki ka halwa. Lauki is also called dudhi in many places. This halwa is very tasty and nutritious. I make it on the occasion of navratri and fasting. It can also be made without mawa. For this, lauki has to be cooked well in milk.

If you want to put mawa in Lauki halwa then first cook it well in milk, After that add mawa. It will taste like lachhedar rabri.

LAUKI HALWA WITHOUT MAWA

INGREDIENTS

  • 1/2 kg            lauki /dudhi 
  • 350 gram      sugar
  • 3 tsp              desi ghee
  • 2 cup             milk
  • 1 tsp              milk powder
  • 1/2 tsp           cardamom powder  
  • 8 to 10           almonds (badam
METHOD:

  • Peel and grate the lauki from all over sides and discard the center part of it.
  • Heat 2 tsp of desi ghee in a pan.
  • Fry the almonds in hot ghee and keep aside in a plate.
  • When cool, chop the almonds.
  • Now put grated lauki in the same pan, on low medium flame.
  • Cook the lauki until it becomes soft (lauki will be soft within 7 to 8 minutes)
  • When the lauki becomes soft, put one and half cup of milk in it.
  • Add milk powder to the remaining half cup of milk, mix it properly (it should not have lumps).
  • Put this milk in the same pan and cover the pan.
  • Cook it at least 10 minutes on low flame (keep stirring it occasionally).
  • After 10 minutes add sugar, cardamom powder in it and cook it until the halwa mix together and thickness.
  • Now put 1 tsp desi ghee and chopped almonds, mix it properly, cook it for 1 minute.
  •  Lauki halwa is ready to serve, put it into serving bowl and garnish with almonds.



LAUKI HALWA WITH MAWA


INGREDIENTS

  • 1/2 kg            lauki /dudhi 
  • 350 gram      sugar
  • 4 tsp              desi ghee
  • 2 cup             milk
  • 200 gra         mawa (khoya)
  • 1/2 tsp           cardamom powder  
  • 8 to 10           almonds (badam)
  • 5 to 6             cashew


METHOD:

  • Peel and grate the lauki from all over sides and discard the center part of it.
  • Heat 2 tsp of desi ghee in a pan.
  • Fry the almonds, cashew in hot ghee and keep aside in a plate.
  • When cool, chop the almonds and cashew.
  • Now put grated lauki in the same pan, on low medium flame.
  • Cook the lauki until it becomes soft (lauki will be soft within 7 to 8 minutes)
  • When the lauki becomes soft, put 2 cup  milk in it.
  •  Cover the pan and cook it at least 10 minutes on low flame (keep stirring it occasionally).
  •  After 10 minutes add sugar, cardamom powder and grated mawa in it and cook it until the halwa   mix together and thickness.
  • Now put 1 tsp desi ghee and chopped almonds, cashew mix it properly, cook it for 1 minute.
  •  Lauki halwa is ready to serve, put it into serving bowl and garnish with almonds.

TIPS:

  • Before grating the lauki, taste it as sometimes the lauki turns bitter.
  • Cook lauki halwa on low flame, halwa cooked on low flame becomes creamy like rabri.
