Baingan Bhurta, a cherished Indian delicacy, is a tantalizing dish prepared by roasting eggplant over direct flame, infusing it with the aromatic flavors of ginger and garlic. Unlike the traditional aaloo baingan, Baingan Bhurta holds a special place in my family's heart, loved by all and savored with simple phulkas or plain paranthas.

Ingredients:
- 2 large eggplants (baingun/brinjal)
- 2 large onions, finely chopped
- 2 large tomatoes, chopped
- 2 green chilies, chopped
- 3 cloves garlic, peeled
- 1/2 inch ginger
- 1 tsp red chili powder
- 1/2 tsp garam masala
- Salt, to taste
- 3 tsp oil
- 2 tsp desi ghee (clarified butter)
Method:
- Make two slight cuts in the eggplants and stuff them with 3 cloves of garlic and a piece of ginger.
- Grease the eggplants and roast them over medium flame, ensuring they are evenly roasted from all sides.
- Once roasted, let the eggplants cool down. Remove the garlic and ginger, grind them into a paste.
- Peel off the skin from the eggplants, ensuring there are no worms inside, and mash the roasted eggplants.
- Heat 3 tsp of oil in a pan over medium flame. Add the thick ginger-garlic paste and cook for a while.
- Add chopped onions and cook until translucent. Then, add green chilies and tomatoes. Fry until the tomatoes soften.
- Add the mashed eggplant to the pan and cook for 2 minutes.
- Season with salt, red chili powder, and mix well. Fry until the bhurta starts leaving the pan.
- Sprinkle garam masala and mix thoroughly. Turn off the flame.
- Finally, add 2 tsp of desi ghee, cover the pan for 1 minute to enhance the flavor.
- Transfer the Baingan Bhurta to a serving bowl and enjoy it with simple phulkas, tandoori naan, paranthas, or missi roti.
