Touri (Ridge Gourd) is a vegetable eat in the summer season.It contain many nutrients. It is very easy to digest therefore those people who have weak digestive power are advised to eat touri. Touri is prepared in many ways such as TOURI WITH URAD DAL BADI, TOURI WITH CHANA DAL, TOURI WITH MOONG DAL. If touri is made with urad dal badi then it becomes very spicy and delicious. Serve this type of touri with simple chapatti food will be very tasty even if it is very simple.

Ridge Gourd (Touri) With Urad Dal Badi

INGREDIENTS:

  • 500 gram---Touri(ridge gourd) (peeled and cut into medium sized pieces
  • 1 large---Onion(chopped)
  • 3 cloves---Garlic (peeled and crushed)
  • 1/2 inch---Ginger(grated)
  • 1--Green chili (chopped)
  • 2---Tomatoes (finely chopped)
  • 2 tsp---Pieces of Urad Dal Badi
  • 1/2 tsp---Jeera (cumin seeds)
  • 1 tsp---Sukha dhania powder (dry coriander powder)
  • 1 tsp---Lal mirch powder (red chili powder)
  • 1/2 tsp---Haldi powder (turmeric powder)
  • 1/2 tsp---Garam masala
  • a pinch of Hing (asafoetida)
  • According to taste--Salt
  • 2 tsp---Desi ghee
  • 1/2 tsp---Lemon juice


METHOD:

  • Heat 2 tsp desi ghee in a pan, on medium flame.
  • Put urad dal badi ,fry it till badi becomes golden color.
  • Take out the badi from the pan, keep aside it.
  • Put hing and cumin seeds into the pan.
  • When cumin seeds begin to crack, put ginger-garlic paste in it.
  • Fry it for 5 seconds, when ginger-garlic paste then add onion.
  • When onion becomes translucent, put green chili and tomatoes.
  • cook it till tomatoes become soften.
  • Put pieces of touri and fried urad dal badi and put red chili powder, turmeric powder, dry coriander powder and salt, mix it properly.
  • Put a little water in it, cover it and cook it for 5-6 minutes.
  • Keep stirring it occasionally.
  • When touri has cooked put garam masala in it.
  • Switch off the flame.
  • Put it into serving bowl and mix 1/2 tsp lemon juice in it at the time of serving.
  • Serve it with simple chapatti and parantha.


Ridge Gourd (Touri)  With Green Gram Split Lentils (MoongChilka Dal) 


INGREDIENTS:

  • 500 gram---Touri(ridge gourd) (peeled and cut into medium sized pieces.
  • 1/2 cup--Moong Chilka Dal (green gram split lentils)
  • 1 large---Onion(chopped)
  • 3 cloves---Garlic (peeled and crushed)
  • 1/2 inch---Ginger(grated)
  • 1 Green chili (chopped)
  • 2---Tomatoes (finely chopped)
  • 1/2 tsp---Jeera (cumin seeds)
  • 1 tsp---Sukha dhaniya powder (dry coriander powder)
  • 1 tsp---Lal mirch powder (red chili powder)
  • 1/2 tsp---Haldi powder (turmeric powder)
  • 1/2 tsp---Garam masala
  • a pinch of Hing (asafoetida)
  • according to taste--Salt
  • 2 tsp---Desi ghee
  • 1/2 tsp---Lemon juice

METHOD

  • Wash moong chilka dal thoroughly with water.
  • Heat 2 tsp desi ghee in a pressure cooker,on medium flame.
  • Put hing and cumin seeds into the pan.
  • When cumin seeds begin to crack, put ginger-garlic paste in it.
  • Fry it for 5 seconds, when ginger-garlic paste then add onion.
  • When onion becomes translucent, put green chili and tomatoes.
  • cook it till tomatoes become soften.
  • Put pieces of touri and moong chilka dal and put red chili powder, turmeric powder, dry coriander powder and salt, mix it properly.
  • Put a little water in it, close the pressure cooker with a lid.
  • Switch off the gas after two whistles.
  • Open the lid of the cooker after the steam is completely released from the cooker.
  • Put garam masala in it and mix it properly. 
  • Put it into serving bowl and mix 1/2 tsp lemon juice in it at the time of serving.
  • Serve it with simple chapatti and parantha
TIPS

  • There is no need to pour water in it because touri releases water while cooking but some gravy in it, increases its taste.
  • Put 1/2 tsp lemon juice while serving.
