Bharwan Karela


Due to bitter taste, very few people like to eat karela (bitter gourd). Children run away from eating when they hear the name of it. Its taste is bitter but rich in properties. It is very beneficial for diabetic patients. My family member does not like to eat it, but they like to eat bharwan karela. We can serve it as side dish.

INGREDIENTS:

  • 250 gram---karela (bitter gourd)
  • 2 large---onion (finely chopped)
  • 2--green chili(chopped) 
  • 2 tsp ---ginger -garlic paste.      
  • 1/2 tsp---saunf (fennel)
  • 1/2 tsp---jeera (cumin seeds)
  • 1 tsp---lal mirch powder (red chili powder)
  • 1/2 tsp---haldi (turmeric powder)
  • 1 tsp---aamchur (dry mango powder)
  • 1 tsp---dhaniya powder (dry coriander powder)
  • 1 tsp---curd
  • 1 tsp---milk
  • 5 tsp---oil
  • according to taste---salt

METHOD:

  • Cut off both ends of karela and peel off it. Keep aside the peel.
  • Cut the karela to length from middle and extract the seeds of it.
  • Apply salt on karela and its peel, keep them for 2 hours.
  • Heat 2 tsp oil in heavy bottom pan on medium flame.
  • Put fennel seeds, cumin seeds.
  • After cracking the cumin seeds put ginger-garlic paste, cook it for a while.
  • Add onion, cook the onion it becomes golden color and add green chili.
  • Wash and squeeze salted peel and put into the mixture, cook it for 2 minutes.
  • When peels become soften then add salt, red chili powder, turmeric powder, dry coriander powder and mango powder.
  • Mix it properly, cook it for 1 minute, add curd and mix it well.
  • Switch off the flame,
  • Take out the mixture in a plate, let it be cool down.
  • Wash the salted karela and dry it with kitchen towel.
  • Fill the mixture in karela.
  • Heat 3 tsp oil in a pan, put filled karela one by one.
  • Cover it and cook it for 15 minutes on low flame.
  • Keep stirring it occasionally.
  • Cook the karela until it gets soften.
  • Sprinkle 1 tsp milk on it when karela is cooked.
  • Switch off the flame, put it into serving bowl.
  • Serve it as side dish with dal and simple phulka.
TIPS
  • It becomes soften when sprinkle some milk on karela.
  • Adding dry mango powder in its filling reduces bitterness of karela.
