Pickle is the pride of Indian food. As the summer season comes, preparation for pickle of mango in homes begin. you can eat it with any type of Indian food. If the food is not choice of children, then mostly children like to eat paratha with mango pickle.

INGREDIENTS:

  • 1/2 kg. ---Raw mango 
  • 1 tsp---Fennel seeds (saunf)
  • 1 tsp---Fenugreek seeds (methi dana)
  • 2 tsp---Salt (you can take as your taste)
  • 1 tsp---Red chili powder (lal mirch powder)
  • 1/2 tsp---Turmeric powder (haldi powder)
  • 1 tsp---Vinegar
  • 1/2 cup---Mustard oil (sarson ka tel)

METHOD:

  • Peel raw mango and cut into small sized pieces and take out its seed.
  • Dry roast the fennel seeds and fenugreek seeds and coarsely grind it.
  • On high flame, heat mustard oil until the smoke arrives, switch off the flame, leave it be cool for some time.
  • When the oil is cooled put small pieces of mango in it.
  • Now cook it on medium flame till 3 minutes.
  • Take out from flame and put salt, red chili powder, turmeric powder and coarsely grind masala and mix it properly.
  • Put 1 tsp vinegar and put it in clean and dry jar.
  • Put the pickle in sunlight for 1 day then put it in the fridge.
  • This pickle is ready to eat in 1 day.

TIPS:

  • Wash and dry properly before cutting the raw mangoes.
  • Mangoes should not have any moisture.
  • Jar should be clean and dry.
  • Cutting the mango into small pieces makes the pickle quickly and everybody can take it according to their need.
