Aaloo badi sabzi makes then in homes, when no fresh vegetable in fridge only potatoes are kept in house. Aaloo badi is prepared in less time with less ingredients. mostly badi is made of moong dal (lentils) or urad dal (lentils). Urad dal badi is spicier than the moong dal badi. Amritsar badi is very famous due to its very spicy. Aaloo badi is very delicious to eating with paratha, missi roti and rice.

       INGREDIENTS:                                                                                 

  • 250 gram---Aaloo (potatoes)
  • 1/2 cup---Urad dal badi (make small pieces of badi)
  • 2--- Tomatoes
  • 1/2 inch---Ginger (grated)
  • 2---Green chili (chopped)
  • 1 tsp---Curd
  • 1 tsp---Red chili powder (lal mirch powder)
  • 1/2 tsp---Turmeric powder (haldi)
  • 1/2 tsp---Cumin seeds (jeera)
  • 1/2 tsp---Dry coriander powder (dhaniya powder)
  • 1/2 tsp---Garam masala
  •  A pinch---Asafoetida (hing)
  • According to taste---Salt
  • 4 tsp---Oil
  • 1/2 tsp---Kasuri methi (for garnishing)

METHOD:

  • Chopped the tomatoes and prepare tomato puree.
  • Cut the potatoes into medium size pieces.
  • On medium flame, heat 4 tsp oil in pressure cooker.
  • Put pieces of badi, fry the badi until it gets golden colour.
  • Take out the badiyan from the cooker and keep aside it.
  • Put cumin seeds and asafetida into the cooker.
  • Put ginger, green chili and tomato puree on crackling the cumin seeds.
  • Cook it for 2 minutes, when the oil separates from tomato puree, put pieces of potatoes.
  • Put salt, red chili powder, turmeric powder and mix it properly.
  • Put fried badiyana and curd and cook it for a while.
  • Put 3/4 glass of water, put whistle in the cooker, cook it for 2 minutes after coming to 1 whistle.
  • When the steam leaves, open the pressure cooker and put garam masala, mix it gently.
  • Put aaloo badi into serving bowl and sprinkle crushed kasuri methi.
  • You can enjoy it with missi roti, tandoori roti, plain rice or jeera rice.

HOW TO MAKE ALOO BADI KI SABZI IN THE PAN


INGREDIENTS:

  • 250 gram--- Aaloo (potatoes)

  • 1/2 inch---Ginger (grated)
  • 2---Green chili (chopped)
  • 1 tsp---Curd
  • 1 tsp---Red chili powder (lal mirch powder)
  • 1/2 tsp---Turmeric powder (haldi)
  • 1/2 tsp---Cumin seeds (jeera)
  • 1/2 tsp---Dry coriander powder (dhaniya powder)
  • 1/2 tsp---Garam masala
  •  A pinch---Asafoetida (hing)
  • According to taste---Salt
  • Oil for frying
  • 1/2 tsp---Kasuri methi (for garnishing)

METHOD:


  • Chopped the tomatoes and prepare tomato puree.
  • Cut the potatoes into medium size pieces.
  • On medium flame, heat oil in a pan for frying.
  • Put pieces of badi, fry the badi until it gets golden color.
  • Take out the badiyan from the pan and keep aside it.
  • Now fry the pieces of potato om low medium flame.
  • When the potato become soft and golden, take them out. 
  • On medium flame, Heat 2 tsp oil in a pan.
  • Put cumin seeds and asafoetida into the pan.
  • Put ginger, green chili and tomato puree on crackling the cumin seeds.
  • Cook it for 2 minutes, when the oil separates from tomato puree, put fried badiyan and potatoes.
  • Put salt, red chili powder, turmeric powder and mix it properly.
  • Put curd while stirring continuously (whenever put curd to any gravy, keep stirring it continuously)
  • Cook for 5 minutes.
  • Put 3/4 glass of water, cook till the gravy thickens.
  • When the gravy becomes thick, switch off the flame and cover it., add garam masala and cover it.  
  • Aaloo badi ki sabzi is ready to serve. 
  • Put aaloo badi into serving bowl and sprinkle crushed kasuri methi.
  • You can enjoy it with missi roti, tandoori roti, plain rice or jeera rice.
