Sevaiyan are made from wheat flour which are also known as vermicelli. Sevaiyan is made in many ways, for example, if you like to make namkeen sevaiyan then you can make sevaiyan pullav and if you like sweet then its kheer can be made whenever there is need to make sweet at home suddenly, at that time, sevaiyan kheer is best option. After dinner in my family all members eat sevaiyan kheer with great passion.

INGREDIENTS:
- 1 cup---Vermicelli (sevaiyan)
- 2 tsp---Desi ghee
- 4 cup---Milk
- 1/2 cup---Sugar
- 1/2 tsp---Cardamom powder
- 1 tsp---Pistachio (chopped)
- 8---Almonds (chopped)
METHOD:
- On medium flame, heat 4 cup of milk in heavy bottom pan.
- Cook until the milk thickens.
- When it is thick remove the milk from the flame and keep aside it.
- On medium flame, heat 2 tsp ghee in another pan and roast the almonds and pistachio.
- Broke the sevaiyan and put into pan, roast the sevaiyan for 3 minutes.
- Now add milk to it, keep stirring it constantly.
- cook it for a while.
- Keep some almonds and pistachio for garnishing.
- Add almonds, pistachio and cardamom powder to it.
- Add sugar to it, cook it for 2 minutes.
- Switch off the flame.
- Put it into serving bowl and garnish it with chopped almonds and pistachio.
TIPS:
- Sevaiyan can also be kept by roasting.
- At the time of serving, you can add milk.
