Aam Ki Launji

 Raw mango sweet sour launji made to make food tastier in summer . These launji become ready in very short time. Sweet sour launji is prepared with mango, ,jaggery and spices. I also put mango kernels in it while making mango launji. I have learned this method from my grandma, who used to put kernel to it while preparing mango launji.

INGREDIENTS:


  • Raw mango          3(250 gram)
  • Green chili           2 (chopped)
  • Fenugreek seeds (methi dana)     1/2 tsp
  • Fennel (saunf)                               1/2 tsp
  • Cumin seeds (jeera)                      1/2 tsp
  • Salt                                                 1/2 tsp
  • Black salt                                       1/4 tsp
  • Red chili powder (lal mirch powder)     1 tsp
  • Turmeric powder (haldi)              1/2 tsp
  • Black pepper (kali mirch)            1/2 tsp
  • Garam masala                               1/2 tsp
  • Jaggery (gud)                                3/4 cup 





METHOD:

  • Wash and peel the raw mangoes.
  • Grate the mangoes, keep the kernel aside
  • Heat oil in a pan, put fenugreek seeds in it.
  • When the fenugreek seeds crackle add fennel seeds and cumin seeds to it. 
  • Now add grated mango, kernel and chopped green chili to it.
  • Put black salt, salt, red chili powder, turmeric powder, black pepper in it.
  • Mix it properly, cook it for 2 minutes.
  • put crushed jaggery and garam masala to it.
  • Put 1 cup of water in it.
  • Cook it until it becomes thick.
  • Sweet sour mango launji is ready. to serve, you can enjoy it with simple phulka ,parantha, poorie



 
SECOND METHOD TO PREPARE AAM KI LAUNJI

INGREDIENTS:

  • Raw mango          3(250 gram)
  • Green chili           2 (chopped)
  • Fenugreek seeds (methi dana)     1/2 tsp (crushed)
  • Fennel powder (saunf powder)    1/2 tsp 
  • Cumin seeds (jeera)                      1/2 tsp
  • Salt                                                 1/2 tsp
  • Black salt                                       1/4 tsp
  • Red chili powder (lal mirch powder)     1 tsp
  • Turmeric powder (haldi)              1/2 tsp
  • Black pepper (kali mirch)            1/2 tsp
  • Garam masala                               1/2 tsp
  • Jaggery (gud)                                3/4 cup 

Method:

  • cut the mangoes into pieces.
  • Heat oil in a pan, put cumin seeds in it.
  • When the cumin seeds crackle add crushed  fenugreek   to it. 
  • Now add  pieces of mango, and chopped green chili to it.
  • Put black salt ,salt ,red chili powder, turmeric powder, black pepper in it. 
  • Put 1 cup of water in it.
  • Mix it properly, cook it for 2 minutes.
  • put crushed jaggery, fennel powder and garam masala to it. 
  • Cook it until it becomes thick.
  • Sweet sour mango launji is ready to serve, you can enjoy it with simple phulka ,parantha, poorie
