There is a trend of making many types of recipe made from gram flour(besan) in Rajasthan. When vegetables are not available, people make sabzi from the things available at home, such as: gatte ki sabji ,besan pitod ki sabzi ,kadi etc. Besan pitod ki sabzi,  The first time ,I ate in my in-laws Jaipur, I found this sabzi is very spicy and tasty. Gram flour and curd are used a lot in Rajasthani food.The main ingredients required in "pitod ki sabzi" are gram flour and curd.

INGREDIENTS:



Pittod and Gravy

  • gram flour (besan)                               2 cup
  • curd                                                       1/2 cup
  • salt                                                         1/2 tsp
  • asafoetida (hing)                                   a pinch
  • cumin seeds (jeera)                              1/2 tsp
  • turmeric powder (haldi)                       1/4 tsp
  • oil                                                             1 tsp
  • water                                                       2.5 cup
  • oil for frying pitto                       
  • onion                                                            1 (chopped)
  • green chili                                                    2 (chopped)
  • ginger garlic paste                                       1 tsp
  • oil                                                                   2 tsp
  • curd                                                               1/2 cup
  • carom seeds (ajiwain)                                  1/2 tsp
  • cumin seeds (jeera)                                      1/2 tsp
  • red chili powder (lal  mirch powder)         1 tsp
  • turmeric powder                                          1/2 tsp
  • garam masala                                               1/2 tsp
  • water                                                             1 cup

METHOD:


  • Sieve the gram flour in a bowl.
  • Add salt and turmeric powder to the sieved gram flour and mix it properly.
  • Put curd in this mixture and beat it continuously so that there are no lumps in it. 
  • Mix two and a half cups of water to the mixture equal.
  • There should not be any lumps in the mixture.
  • Grease a plate with oil and keep it inside.
  • On the medium flame, Heat 1 tsp oil in a pan.
  • Put cumin seeds and asafoetida in it.
  • Now add gram flour mixture and cook it for 5-6 minutes.
  • Keep stirring it continuously.
  • When this mixture starts leaving the pan then turn the mixture into greased plate
  • Now keep it to cool down for 20 minutes.
  • On  cooling ,it was cut into square pieces, pitod is ready.
  • Heating oil in a pan and shallow frying the pitod.
  • Fry the pitod till it becomes golden on both sides.

Now we prepare gravy for pitod:


  • Heat 2 tsp oil in a pan and put cumin seeds, carom seeds, hing 
  • When the cumin seeds crackle ,add ginger garlic paste and cook it for 2 seconds.
  • Put chopped onion and green chili.
  • Cook the onion till it becomes translucent.
  • Put salt, red chili powder ,turmeric powder, dry coriander powder and cook it for few seconds.
  • Turn the flame on low level ,put curd and keep stirring it continuously
  • Now add 1 cup of water and cook it for 7 to 8 minutes on medium flame.
  • When the gravy comes to a boil, add the pitod.
  • Switch off the flame.
  • Rajasthani besan pitod ki sabzi is ready to serve, you can enjoy it with parantha, bajra roti, rice and simple phulka.
