If there is any stuffed vegetable with dal roti then the enjoy of eating food is doubled.  I have explained the recipe of bharwan vegetables like Bharwan baigan,Bharwan tinda, Bharwan karela, now I am telling you the next vegetable in the category of bharwan vegetables and that is shimla mirch.  Bharwan shimla mirch is very popular in Punjab . Potato and onion is used in shimla mirch filling.

INGREDIENTS:

  • 250 gram      shimla mirch (capsicum)
  • 2-potato (boiled)
  • 1/4 cup          cottage cheese (optional)
  • 2                    onion (finely chopped)
  • 4 tsp              oil
  • 1/2 tsp           ginger garlic paste
  • 1 tsp              red chili powder
  • 1 tsp              dry coriander powder
  • 1/2 tsp           cumin powder
  • 1/2 tsp           turmeric powder
  • 1/2 tsp           dry mango powder (aamchur powder)
  • 1/2 tsp           garam masala
  • salt according to taste

Method:

  • Peel the boiled potatoes and mash it.
  • Heat 1 tsp of oil in a pan and add ginger garlic paste in it .
  • Cook it for 2 seconds and put onion in it.
  • Cook the onion till it becomes translucent.
  • When onion is frying, put mash potatoes and crumbled cheese in it.
  • Put salt, red chili powder, turmeric powder ,coriander powder and cumin powder.
  • Mix it properly and cook the mixture for 5 minutes while stirring occasionally.
  • Put garam masala and dry mango powder to it.
  • Take out the mixture from the pan and let it cool in the plate,
  • Cut the top of the shimla mirch and remove its seeds from inside,
  • When the mixture cool down, fill the mixture in shimla mirch with the help of spoon.
  • Heat 3 tsp oil in non-stick pan on the low medium flame.
  • Put the shimla mirch in the pan one by one.
  • Cover the pan with lid.
  • Cook the shimla mirch thoroughly
  • It will take 15 to 20 minutes for the shimla mirch to cook all sides.
  • When the shimla mirch   turns golden and shrinks in size,it will be understood that it has cooked well.
  • Switch off the flame, bharwan shimla mirch is ready to serve.
  • You can enjoy it as side-dish in your lunch or dinner.
